GRILLED JALAPEÑO HONEY CHICKEN
Ingredients
• 2 lbs boneless skinless chicken thighs
• 1/4 cup East Side Honey Jalapeño Creamed Honey
• 2 tbsp olive oil
• 1 tbsp lime juice
• 1 tsp garlic powder
• 1 tsp smoked paprika
• 1 tsp salt
• 1/2 tsp black pepper
Instructions
1. Preheat grill to medium-high heat.
2. In a bowl, whisk together jalapeño honey, olive oil, lime juice, garlic powder, paprika, salt, and pepper.
3. Reserve 2 tablespoons of the mixture for glazing. Toss the chicken with the remaining marinade and let sit 30 minutes.
4. Grill until the chicken reaches your preferred level of char, or until the internal temperature reaches 165°F. If the outside is done before the chicken is fully cooked, transfer it to a 350°F oven and finish cooking until it reaches 165°F.
5. During the last few minutes of cooking, brush with the reserved jalapeño honey glaze.
6. Rest for 5 minutes before serving.
